Baked Cheesecake
This really is one of my favourite desserts, If you don't decorate the top it will last longer and you can add whatever you want at the last minute but for that special occasion or when you have guests to impress take your time and decorate the top then serve it whole at the table try big curls of white or dark chocolate instead of fruit for a really indulgent treat.
Ingredients
Base
5 oz Crushed Digestive Biscuits
2 oz Melted Butter
1/4 teaspoon powdered Cinnamon
Filling
1 lb Cream Cheese
2 oz Self raising flour
5 oz Castor Sugar
1/4 teaspoon salt
1/2 teaspoon vanilla essence
4 eggs
1 small tin evaporated milk
Method
1 Thoroughly combine all the base ingredients together and press evenly into the bottom of a well greased 9" cake tin. refrigerate.
2.Put the cream cheese, flour, sugar,salt and vanilla into a food processor and beat until smooth.
3.add the egg yolks 1 at a time and stir in the evaporated milk
4.In a very clean bowl whisk the egg whites until stiff but not dry
5.Gently fold the egg whites into the cream cheese mixture then pour on to the base mix
6.Bake at 325 degrees Fahrenheit for about 1 hour until set.
7.When completely cold carefully remove from the tin.
8.Serve well chilled.
9.If you wish you can decorate the top with soft fruit and glaze.
