Summer Cooking with Kids, Lamb Koftas & Shortbread Biscuits

Summer Cooking with Kids, Lamb Koftas & Shortbread Biscuits: these two recipes are great to do with the kids as  they both have very little preparation, both recipes use the food processor so are quick and easy for those short attention spans,busy mums or those who just wish to get back out into the sun with a gin and tonic!

Lamb Koftas

Minced lamb                    200g
Garlic clove crushed       1 each
Paprika                            1 tsp
Chilli powder                    ½ tsp
Cinnamon powder           ½ tsp
Cumin powder                 ½ tsp
Ground ginger                  ½ tsp
Fresh mint chopped        2 tbsp
Egg                                   1
Natural yoghurt                 2 tbsp

Method

1.       Place all the ingredients into a food processor.  Pulse until well combined and finely chopped.
2.       Remove the mixture from the processor and mould around skewers to form kofta shapes.
3.       Heat up some oil in a frying pan and pan fry the kofta for 8 -10 minutes, turning often to ensure an even colour.
4.       To garnish serve with lemon wedges.


Tip: Finish cooking these on the barbecue and serve with pita, Salad, and Tzatziki.


Shortbread Biscuits

Soft flour                150 g
Butter                     100 g
Castor sugar          50 g

Method
  1. Place all ingredients into a food processor.
  2. Blend until the mixture starts to come together – do not over process.
  3. Turn out onto lightly floured surface.
  4. Knead gently until a soft paste is formed.
  5. Shape into a cylinder and wrap in cling film.
  6. Rest in a cool place for 30 mins.
  7. Slice into rounds OR roll out as for biscuits.
  8. Bake at 200 C, gas 6 for 12 – 15 mins or until LIGHTLY coloured.
  9. Remove from oven. Sprinkle with castor sugar.
Tip: You can pop this mix in the freezer after stage 5 and keep for when you have guests, then all you have to do is defrost , slice into rounds, bake and serve whilst still warm
