Cheese Cake
Ingredients
For the base
5oz Crushed Digestive Biscuits
2oz Melted Butter
¼ Tsp Powdered Cinnamon
For the Filling
1lb Cream Cheese
2oz self raising flour
5oz Sugar
¼ Tsp Salt
½ Tsp Vanilla essence
4 Eggs
Evaporated milk
Method
To prepare the base combine the crumbs cinnamon and melted butter, mix thoroughly and press evenly into the bottom of a well greased 9” round cake tin.
To prepare the filling, beat the cream cheese, add the flour, sugar, salt, and vanilla and continue beating until smooth.
Add egg yolks one at a time and stir in the evaporated milk.
Whip the egg whites until stiff but not dry and then fold gently into the cheese mixture. Pour onto the crumb base.
Bake at 325 ̊f (160 ̊C) for approximately 1 hour until set.
When completely cold carefully ease away from tin and remove.
Decorate with fruit and glaze.
Serve well chilled
