Basic Bun Dough
Basic Bun Dough (straight bun dough method)
Ingredients
1lb Strong flour
2oz Margarine
2oz Sugar
½ oz Milk Powder
1 Egg
¼ oz Bread improver
7oz Water (1oz Cold 6oz Hot)
1oz Fresh Yeast
¼ oz Salt
2oz Currants
Method
Mix all dry ingredients (except currants)
Cream the eggs and sugar
Disperse the yeast with 1oz cold water
Mix the margarine with the dry ingredients
Add the yeast and mix
Add the 6oz of Hot water
Add the eggs and sugar
Knead to a smooth dough and cover
Allow to prove for 30 minutes or until doubled in bulk.(Bulk Fermentation)
Knock back and add the currants
Cut into 2oz pieces, shape, and prove
Bake
Glaze with bun glaze (see hot cross buns) or cover with fondant
