Here's 2 recipe's for soda bread the first one is more traditional however the alternative recipe isn't to bad if you can't get hold of buttermilk.
Recipe
6oz Plain
Flour
6oz
Wholemeal Flour
½ Tsp Salt
½ Tsp
Bicarbonate of Soda
½ Tsp Cream
of Tartar
½ Pint of
Buttermilk
Method
Sieve the
flours twice to remove any husk from the wholemeal, sieve in all other dry
ingredients and mix to distribute through the flour.
Make a well
in the flour and pour in the Buttermilk and mix gently with a knife until most
of the flour is taken, tip the mix onto a board and knead gently with floured hands (add more milk
if necessary)
Bake in a
hot oven for 20 mins and reduce to 200 ̊C for a further 20 mins.
Alternative Recipe
2lb Plain
Flour
2 Tsp Cream
of Tartar
1 Pint of
Milk
1 Tsp
Bicarbonate of Soda
Method
Sieve all
dry ingredients into a bowl, and mix to distribute evenly throughout. Make a well
in the centre and pour in the milk and mix gently with a knife until most of
the flour is taken, tip the mix onto a board and knead gently with floured hands (add more
milk if necessary)
Bake at 205
̊C for 1 hour or more. (Cover with Foil half way through so as not to get too
brown).
