Marmalade Bread and Butter Pudding

This is great even if your not a fan of Marmalade as it goes all sticky and chewy on top.

Ingredients

1pt Milk
3 Large Eggs
2oz Castor sugar
3 to 4 Slices of Bread (slightly stale is best)
2oz Sultanas
Marmalade
Butter
extra sugar for sprinkling
Vanilla essence

Method

Butter an oven proof dish
Butter the bread and put marmalade onto one slice (for the top) then cut each slice into 4 triangles, I like to leave the crusts on as they go all chewy but you can remove them if you wish
In a pan gently warm the milk
In a separate bowl whisk the eggs and sugar together until thick and creamy and all the sugar has dissolved, pour over the warmed milk and stir. (Custard)
On the bottom of your dish put some of the buttered bread and sprinkle on some sultanas and a little sugar add another layer of bread and more sultanas and sugar building up the layers and finishing with the marmalade layer,
Gently pour on the custard and then leave to soak for at least a half hour (Good time to clean up), I like to press the bread down with the back of a fork to make sure all the bread soaks up some custard.
Bake at 200 ̊C until it soufflés and is a dark golden brown and firm to touch
Remove from the oven and allow to stand for 10 minutes before serving with cream or custard, it’s also great cold

Cooks Tip

Last time I made this I had a very ripe banana which I mashed into the bread rather than adding the extra sugar I also added some milk chocolate to the custard, the resulting pudding was out of this world.
