Plain Sponge
Ingredients

3 Large Eggs
5oz Castor Sugar
5oz Flour

Method

Whisk eggs and sugar to ribbon stage
Sift flour onto Greaseproof paper then gently tip into the egg mix and fold in.
Put into a greased and lined 8” cake tin and bake at 190-200 ̊C (375-400 ̊F) for 10-15 minutes
