Poudin Soufflé
Ingredients
1oz Flour
1oz Cornflour
2oz Butter
2oz Sugar
2 ½ oz Egg Whites
2 ½ oz Egg yolks
½ pint of milk
Lemon, Orange
Method
Mix flour, corn flour and butter to a smooth paste
Boil the milk and half of the sugar, add the paste and cook until it thickens, add chosen flavour
Add egg yolks and mix in quickly
Whisk egg whites and remaining sugar until stiff, add a quarter of it to the mix to soften it and then gently fold in the rest
¾ fill greased and sugared dariole moulds
Cook in a bain-marie at the top of the oven 400̊F / 200̊C for 15 minutes
Serve immediately on a sugared flat with a sauce or coulis of your own choice
