Victoria Sandwich
Ingredients
2 large Eggs beaten and weighed (4oz weight)
4oz Margarine
4oz Castor Sugar
4oz Flour
½ Level teaspoon Baking powder
Method
Sieve the flour and Baking Powder onto greaseproof paper
Cream the fat and sugar until soft and fluffy
Gradually add the beaten eggs
Lightly mix in the flour and baking powder
Divide into two 18cm (7”) greased sponge tins
Bake in a hot oven 230-250 ̊C (475-500 ̊F) for 12-15 minutes
