Fruity Beef Curry

Fruity Beef Curry (Lamb, chicken, Veal)

This is a kind of Anglo Indian curry and can be made using a range of other meats but the process is just the same, sorry there are no quantities but its one of those recipes that you can play around with to suit your own taste, children tend to like it as it is but you can add chillies if you want some heat

Ingredients

Diced Beef
Curry powder
Garam masala
Garlic
Apples Skinned and diced
Tinned Pineapple chunks and Juice
Flour
Chicken Stock
Tomato puree
Tinned Coconut
Mango Chutney
Onion
Bouquet Garni
Corriander

Method

Season the meat then roll in the curry powder before sealing it off in very hot fat.
Remove the meat and drain in a colander over a pan to save the juices.
Sweat off the onion and garlic add the Garam masala, apples, coconut and chutney and mix
Return the meat and sprinkle on the flour over the whole surface, brown in the oven for about 10 minutes.
Remove from the oven and add tomato puree then cover with stock and stir well
Add pineapple juice and Bouquet Garni bring to the boil, reduce the heat and simmer until the meat is tender.
When cooked strain the meat and return the sauce to the stove reduce the sauce to the correct consistency and season
Return the meat to the sauce and add pineapple chunks and chopped corriander

Serve with boiled rice
