Fruit Scones



Self raising flour 225g
Baking powder 1 tsp
Salt pinch
Butter (softened) 50g
Castor sugar 25g
milk 150ml
Sultanas 55g

  • Sieve the flour, baking powder and salt together.
  • stir in the sugar
  • Add the softened butter and rub together to form a breadcrumb like mixture.
  • Add Sultanas
  • Add milk until a smooth dough is made.
  • Leave to rest for 10 minutes.
  • Roll on a lightly floured surface until 2 cm thick
  • Use a 5 cm plain cutter and cut out scones( be careful not to twist the cutter as this will result in an uneven rise).
  • Place on a baking sheet and cook at 220°c for 10-12 minutes until golden brown
  • Allow to cool and serve with whipped cream and jam
